When preparing beets, i like to roast or steam them.

Pickled beets for babies. Boil until tender but not soft. Stir warm, pureed beetroot into natural yogurt. Put in a medium bowl.

Not too big or you will waste vinegar. Tie pickling spice and chilli pepper (s) in some cheesecloth and add to pot. And because of the rich beet coloring, a glass jar filled with pickled beets looks quite visually stunning.

You can discuss with your baby's doctor before you add beets to your little one's diet. Drain the beets, then peel and slice them. It would also contain vitamin c, iron, magnesium, potassium, folate and manganese.

Bring all ingredients to a boil, stirring constantly to dissolve sugar. These babies will keep for up to a month in your fridge. Place sugar, vinegar, water, salt and spices in a medium sauce pan.

This should take about 30 minutes to one hour depending on the size of the beets. I reduced the heat and boiled gently for 15 minutes, until the spices infused the liquid. Reduce heat to medium and let simmer for roughly 15 minutes.

Cut the tops off of the beets, leaving about an inch of stem attached to the beet. It may sound yucky, but the sweetness of the beets is offset by the 'tang' of the yogurt. Steaming beats for easy mashing into a baby food is the best preparation.

Beets will remain fresh for about 1 week as long as they are kept cold. Put in the beets, salt and sugar. Cut off stem and root end, then peel with your fingers to remove the skin.

Pack the sliced beets into jars and top with the brine. Apart from pickled beets, my mom's beet beef soup hits home, that and our national soup, the beetroot cold soup is a soup worth mentioning. Limit the quantity of beetroot to 1 or 2 teaspoons, as it is rich in nitrates which may be hard for your baby to digest.

Using a slotted spoon, i ladled the beets and onions into my hot pint jars, leaving a generous 1/2 inch headspace. I'll probably make a recipe section later when i get the chance. Leave the pickled beets in your fridge for at least 24 hours before diving in.

These are great to add to salads, use for snacking or contribute to condiment trays. Trim off beet roots and rub off skin. And best of all, they are an instrumental first step in making pickled eggs, so save that bright purple liquid!
